Chicken Broccoli Pot Pie

This is an amazingly flavorful dish full of lots of vegetables. It’s a great way to get your kids to eat their veggies and not even know it.
Ingredients -

2 teaspoons Canola Oil
1 Onion (chopped)
2 cans Cream of Broccoli Soup (10 1/2 ounces)
1 cup Whole Milk
1 teaspoon Dried Oregano
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
1 Rotisserie Chicken (skin removed and cut into bite size pieces)
1 package Frozen Vegetables with Peas, Carrots, Corn and Green Beans (10 ounces package)
1 sheet 9 inch Pie Crust Dough
1 Egg (beaten)

 
Preparation:

1. Place baking sheet on center rack in oven.

2. Heat oven to 400 degrees.

3. In pot, heat oil.

4. Add onion and cook until lightly browned.

5. Stir in soup, oregano, pepper, salt, milk and heat through.

6. Remove from heat.

7. Stir in chicken and veggies.

8. Transfer to 9 inch deep dish pie pan.

9. Top with pie crust dough and flute edges.

10. Cut slits in crust to vent.

11. Brush top with egg.

12. Place on baking sheet in oven.

13. Bake 30 minutes or until crust is browned and filling is bubbly.

14. Cool for 30 minutes before serving.

Rotisserie Chicken

Use boneless, skinless chicken breast pieces in place of the rotisserie chicken, if necessary.
